About Whisky Club #25
This month, we are excited to share a beautifully sophisticated and complex whisky that has already become a firm favourite amongst our team here in Kempton. This release has also had many in our team asking the same question, "What is Palo Cortado"?
In short, it is a type of Sherry that sits somewhere between an Amontillado and an Oloroso.
The longer answer is somewhat more complicated. Originally Palo Cortado was produced from casks that were intended to be either Fino or Amontillado sherries, however, the failure of the flor (a layer of yeast that forms across the top of the wine and stops oxidization) during maturation would result in the need to further fortify the wine and mature it oxidatively, more like an Oloroso, thus producing a wine with an aroma of a Amontillado and the palate of an Oloroso.
As for the name, the term Palo (stick) is used on the cask to denote a Fino wine, and Cortado (cut) is the mark the winemaker would make through the Palo on the cask when the flor failed, and they fortified the wine further.

About Palo Cortado Cask
Aroma: A rich, fruity nose with layers of complexity. A polished wood aroma gives way to an intense fruitiness with strawberry jam, maraschino cherries, and orange peel. This continues to develop in the glass with chocolate éclair, honeycomb, and vanilla, as well as cinnamon, cloves, oak, and leather.
Palate: Full and rich across the palate with an initial explosion of rum and raisin chocolate, fruit mince pies, and pecans at first. The whisky dries out across the palate with lemon peel, stone fruit, and rolling tobacco.
Finish: A long, lingering finish with pantry spices, oak, and dark chocolate.

Enter the Draw
Each quarter, you are automatically entered into the ballot to receive an exclusive Old Kempton Whisky Club Members only release. You will be given the opportunity to opt out prior to the ballot day, if it is a whisky that you’re not interested in. If it’s a whisky that takes your fancy, you can also select to ‘double-up’ and purchase two bottles if you are successful in the ballot.
The first Member to double-up receives bottles 1 and 100 of the release. Ballot winners will be randomly chosen once entries close.

If your name is drawn in the Ballot, your bottle is secured, and payment will be taken at that time. Your bottle will be sent straight out for you to enjoy.
If you are unsuccessful in winning a bottle, there is nothing to pay or do – except anticipate the next exclusive release.
