It’s our last Whisky Club ballot of 2025, and do we have a rare and delicious treat on offer exclusively for you!

November’s select Whisky Club offering is a return to a cask combination that our Head Distiller, Rob, has been regularly experimenting with over the last four years -Tasmanian pinot noir finished in American bourbon.

Out in the distillery, we’ve been filling pinot noir casks that have been sourced from Spring Vale Winery on the east coast of Tasmania. These casks are forming the start of an ongoing project that traces cask origin back to the forests the oak was harvested from in France. The purpose of this? To learn exactly what elements of a cask’s providence produce the flavours we are trying to achieve.

Our artisan approach to distilling whisky has definitely paid off this ballot. It is rare that Rob is happy to release a whisky at its natural cask strength - especially when it is 68% abv. To be released this high, the whisky has to be truly exceptional with the alcohol working to carry the flavour, resulting in a complex whisky that evolves as it carries across the palette. That’s not to say you can’t add water if you choose. Treat this whisky like a choose your own adventure novel - drink it at the high abv and experience everthing it has to offer, or add some water and change the story it has to tell. Either way, it is an incredibly enjoyable dram.
